CARROT CAKE WITH VANILLA  FROSTING

  • In a bowl mix almond flour, baking powder, stevia, cinnamon and nutmeg

  • In a separate bowl mix the egg, grated carrots and vanilla essence

  • Mix the coconut oil and butter. Gently heat if needed then let it cool 

  • Add the cooled butter and coconut oil  liquid to the egg and carrot mix well

  • Add the mix the almond flour mixture

  • Bake in  a pre heated oven at 180 degrees celsius for 40 - 50 minutes

  • Frosting: Add scoop of protein powder to mager quark and let it sit in the fridge

  • Add frosting when the cake is cool and top with walnuts

Makes 7 portions, 1 slice is one portion

50 g almond flour

2 eggs

1.5 cups grated carrots

3 tbsp butter

3 tbsp coconut oil

1/2 tsp cinnamon

1/4 tsp nutmeg

Vanilla essence

Baking powder

Stevia

Frosting

125g Mager quark

30g Protein powder
