Pumpkin &

carrot Soup

  • Chop up all ingredients into chunks

  • Brown the onions

  • Add chopped carrot and pumpkin 

  • Add water and bring to boil for 5 minutes 

  • Add bay leaves

  • Let it simmer till veg is soft, then remove from heat and allow to cool

  • Blend in a blended and reheat before serving 

Makes 3 portions 

1 medium onion
200g pumpkin 
2 medium carrots 
500ml water
3 bay leaves
