High Protein Zucchini 

Pepper bread

  • Grate the Zucchini and ring our all the water with a cotton cloth stainer

  • Chop up half the bell pepper

  • Pulse oats in mixer and keep some of the rough texture

  • Put oat in a bowl. Add almond flour, salt, and baking powder

  • Add the Zucchini and bell pepper

  • Add the egg whites and mix thoroughly

  • Bake in a pre-heated oven at 18 Degrees Celsius for 40 -45 minutes

Makes 8 Portions

1 medium zucchini

Half a bell pepper

200 g oats

60 g almond flour

150 g egg whites

salt
